Get summer fit: 7 healthy snack and (light) meal ideas

To get into the summer mood and tone our bodies for the second season of the year (read: summer body), we got some light summer snack and meal ideas for you! These are part of the whole approach to work towards a fitter body (which is a few winter kilos lighter) by eating the right food. This way, we can continue to bloom and shine this summer.

1: Green Pancakes

Our Green Pancakes cannot be missed from the list. The vibrant green color welcomes summer like no other. Perfect as a light breakfast for all power women to start our day in an amazing and energetic way. In addition, it boosts our metabolism for the rest of our day. These Green Pancakes serve perfectly as snack or lunch as well.

2: Brownie bites

Chocolate lovers take note! These brownie bites are divine without leaving you with a guilty feeling because they are also very nutritious. The best is that you can make 13 to 15 balls in one batch. If you cannot eat them all in one go, just save them for the next few days in the fridge.

3: Kale chips

They are just as tasty as regular chips but lighter and more nutritious. We know what to choose! Kale chips are also easy to prepare. After rinsing them with water, remove the kale stems and tear the leaves into smaller pieces. Drizzle them with olive oil and sprinkle them with a pinch of salt. Bake the veggie chips on a baking tray for 10-15 minutes in a preheated oven at 180 degrees. Flip them occasionally until they show a brown colour on both sides. Voilà, they are ready to eat!

4: Whole wheat wraps with chicken and mango

Nothing beats a delicious and fresh wrap for lunch or as a snack when approaching the beautiful summer days. Chicken and mango are the perfect combination if you ask us. Stir fry the chicken with some onions and garlic. You can also top it off with pepper, salt, and chili flakes. Heat up the wraps based on the instructions as indicated on the package. When they are both ready, you can add the mango pieces to the chicken. Then spread them over the wraps and pour the pesto sauce over them. Roll the wraps up and they are ready to eat!

5: Ratatouille

For the veggie lovers among us, Ratatouille is a must. It is perfect as a light meal. For the power women who are not a big fan of vegetables, we teach you how to love vegetables in a fun and delicious way with this French vegetable stew. The variation that we opt for is a mixture of zucchini, fennel, eggplant, and bell pepper. Slice these vegetables and place them in an oven tray. Drizzle them with olive oil and sprinkle them subsequently with salt and pepper.

In addition, put in a few sprigs of thyme and a few cloves of garlic. Mix them well. Then place an aluminum foil over the oven tray and bake the vegetable stew in a preheated oven for 20 mins at 180 degrees. Nice to finish it off with wholemeal pasta and serve with a glass of Cabau Greens. Of course, we can also add our own twist to it with the many delicious vegetables that spring and summer offer us.

6: Couscous with strawberries, feta, and cashew nuts

Do you love couscous as much as we do? As the weather gets more beautiful, this version is to die for: strawberries, feta, avocado and cashew nuts. Embrace the contrast between the sweet taste of strawberries & cashews and the slightly salty taste of feta. Prepare the couscous as you normally would. If you are making it for the first time, you can follow the directions on the package. After the couscous is ready, add in the strawberries, feta, and cashews. You can finalize it with a pinch of salt, pepper, and chili flakes. Tip: add some chicken and lettuce to make it even more spectaculair!

7: Collagen smoothie bowl

This delicious collagen smoothie bowl makes our mouths water. The cheerful colors also brighten our mood right away. Besides serving as a delicious breakfast, it is also very suitable as a snack and light lunch. Not only is it low in calories and helps us towards a fitter body, it also gives us a collagen boost that opens doors for a more glowing skin this summer.
